Maple Syrup Recipes

Old Fashion Cocktail
1 1/2 oz. brandy or whiskey                                Seltzer, Water, or Sweet or Sour Soda
Dash of bitters                                                      Garnish -  Orange Slice and Maraschino Cherry 
1 Tb. pure maple syrup                                       Ice 
 
Measure syrup, bitters and 1/4 soda in glass.  Stir to dissolve syrup.  Add ice. liquor, and remaining soda.  Garnish with fruit.
 
 
Pork Chop Marinade
1 c. pure maple syrup                                    2 c. white wine
4 - 6 pork chops                                              Dash of pepper
 
Combine maple syrup and wine. Add pork chops and allow to marinade for several hours. Cook as usual. Great on the grill!
 

Maple Teriyaki Salmon
1/3 cup apple juice
1/3 cup Country View Farms Maple Syrup
3 Tbsp. soy sauce
2 Tbsp. finely chopped onions
1 minced garlic clove
4 salmon fillets

Combine apple juice, syrup, soy sauce, onions, and garlic; set aside 1/2 c. for basting (cover & refrigerate). Pour the remaining marinade into a large resealable bag. Add salmon, seal bag, and turn to coat both sides. Refrigerate at least 1 hour. Drain and discard marinade. Broil salmon for 5 minutes. Baste with reserve marinade and broil 10 minutes longer or until the fish flakes easily with a fork. Baste frequently.


Sugar Crusted Maple Cake

1 pkg. yellow cake mix
1 cup water
1/3 oil
3 eggs
Glaze:
1/2 cup Country View Farms Maple Syrup
1/2 cup sugar

Preheat oven to 350 degrees. Grease and flour a 12 cup fluted bundt cake pan. In a large bowl, blend all cake ingredients until moistened. Beat 2 minutes at highest speed. Pour into the prepared pan. Bake for 35 - 40 minutes or until a toothpick comes out clean. In a small saucepan, heat syrup and sugar until sugar is dissolved and mixture boils. Pour around the edges of hot cake. Cool upright in pan for 15 minutes, turn onto serving plate. Serve warm or cool - great with ice cream!
